Rosemary Conley: Low fat sultana loaf

I make this low fat sultana loaf a lot - its a bit like a tea bread the sultanas make it moist. Perfect when you want a sweet treat.


Low fat sultana loaf from Rosemary Conley


Ingredients

  • 8oz (225g) self-raising flour

  • 1½ teaspoon mixed spice

  • 1½ teaspoon cinnamon

  • 3oz (75g) brown sugar

  • 12oz (350g) sultanas

  • 10fl oz (300ml) non fat or soya milk


Method


Mix flour, spices, sugar, sultanas. Add milk, mix in.

Bake in a lined 1lb loaf tin for one hour

  1. Pre-heat oven to 160°C/325°F, gas mark 3.

  2. Line a 1lb loaf tin with parchment paper.

  3. In a large bowl, Mix flour, spices, sugar, sultanas

  4. Add the milk and mix well

  5. Bake in a lined 1lb loaf tin for one hour
