I make this low fat sultana loaf a lot - its a bit like a tea bread the sultanas make it moist. Perfect when you want a sweet treat.
Low fat sultana loaf from Rosemary Conley
Ingredients
8oz (225g) self-raising flour
1½ teaspoon mixed spice
1½ teaspoon cinnamon
3oz (75g) brown sugar
12oz (350g) sultanas
10fl oz (300ml) non fat or soya milk
Method
Mix flour, spices, sugar, sultanas. Add milk, mix in.
Bake in a lined 1lb loaf tin for one hour
Pre-heat oven to 160°C/325°F, gas mark 3.
Line a 1lb loaf tin with parchment paper.
In a large bowl, Mix flour, spices, sugar, sultanas
Add the milk and mix well
Bake in a lined 1lb loaf tin for one hour
